Dismantling guitar volume pots?

Is it possible, and if so how and how easy? To take the volume knobs of a old scratch plate and re use the volume pots and 5 way switch parts, and wiring. So pretty much all wiring except for the pickups. This will be for a Strat, I want to re use my squire electronics and put it a fender strat I am customizing.
